Hi Busy Moms!

My friend, Kerry Beck, has organized Homeschool Super Heroes for the past 4 years. I’ve been interviewed, too and have had an opportunity to see first hand what they’re doing to encourage and equip homeschoolers. Here’s what they do: Kerry’s daughters interview homeschool experts and play the interviews as a Back to School event each August.

I just want to say one thing about this though: no one homeschools perfectly.  There. I said it.  However!  There are people who have “been there and done that,” and some of them them are willing to share what they’ve learned along the way.  This is why I love this so much. I’ll never forget the seasoned moms that talked me down out of trees and reminded me to focus on what really mattered when I was younger. That’s why I love this so much.  It’s like having a friend right in your living room!

These interviews are awesome and encouraging. One of the listeners said:

I appreciate the knowledge and wisdom of those who have paved the way in homeschooling. I will be homeschooling my two children and am grateful for the superheroes of homeschooling who willing to share what has worked for them. ~ Michelle

Well, Kerry had a brainstorm earlier this week.

Personally, I think she’s out of her mind….

Dripping Water on a Rainy Day {A quarrelsome wife}

Oops.  I did it again.

Nagged. Corrected. Rolled my eyes. Sighed.

When will I ever learn?

I like to talk about marriage on Fridays.  But I won’t lie to you—I didn’t want to write about marriage this week. Life has been hard

Jay_busymomthese past few days.  It’s been a rough week for me and my beloved.  And when I say “beloved,” I’m serious.  This man I married, he is the other half of me.  The best half.  He’s the keel that keeps me and all my crazy ideas in orbit around planet earth. Without him, I’d be orbiting some other planet, no doubt. He soothes my anxious heart. He’s patient. He’s kind. He’s rock-solid and steady. People like him.  And, he thinks I’m hot. Goodness knows that after seven children and stretch marks that take up most of my torso, I need his affirmation.

Yes, he drives me crazy.  In all the good ways, and some of the bad.

I’m a “shoot and ask questions later” kind of woman.  Jay waits.  I say what I’m thinking. Jay’s quiet until he knows what he wants to say. (I could learn from that.)  Something that the Lord has been teaching me this week is that I am prone to correcting my husband when I should be quiet.  There. I said it.  Sorry if you think less of me. (The line is forming to the left.)

Lately, I’ve heard that “still small voice” a little bit louder. God is reminding me to affirm my husband. To love him. To let him lead. (Tough for a woman like me.) This morning, I had to chuckle as I was reading my Bible.  It was so funny in fact, that I snapped a picture of it.

Dripping Faucet

Okay, okay. I get it.  But what really stood out to me was that last part: “To restrain her is to restrain the wind or to grasp oil in ones’ right hand.”

Boy, that’s the truth.  Husbands are not to “control” their wives. Wives are to be self-controled. To be guided by the Holy Spirit. To love and respect their husbands.  Nagging is the opposite of respect, isn’t it?  Nagging says, “I don’t like the way you do this. Do it my way instead.” Nagging breeds resentment. I’ve been around nagging women.  Lord, help me to be more like you and less … like me.

Let’s face it. We need more of the Holy Spirit in our lives. Wonderful things happen when we allow Him to have His way. Self-control is a fruit of the spirit. It’s evidence that God is at work in my heart and that I’m listening.

If you’re struggling with self-control in this area, you’re not alone, believe me.  Let’s give it to the Lord and be the encouragers we were meant to be. The obvious beneficiary of a wife who does not nag is her husband, but I receive a blessing too.  The blessing that comes from learning when to speak and when to be quiet.  Our sons and daughters will be blessed by our example, too.

Be a blessing,

It Doesn’t Get Better Than This

everymother

It’s back to school time.  Time for school supplies and math books.  Time for meeting new teachers.  Time for ordering curriculum. Time for lists and lunch boxes, kleenex boxes and juice boxes.  A new season is here.

All those people who told me that it would go by fast—those irritating older people at the grocery store who told me to “enjoy it” while I tried to juggle a fussy toddler and keep my 4 yr old out of the bubble gum, those older moms at the library and in church who looked at my little ones with a longing in their eyes that I could not understand—they were right.  Continue reading →

Spicy Baked Zucchini Chips {yum}

Looking for a healthy snack that your kids will love?  Give this a try.  I set them out and our kids ate them up in no time flat. They’re baked and oh-so-delicious!

I’ve seen several versions and tried a few in years past, but this time, I added spice for that extra “kick” and it made all the difference for this spice-loving family.

Zucchini chip ingredients

I used Penzey’s “Northwoods Fire” for it’s smoky flavor but chipotle would be great, too.  I’ll try that next time with some garlic salt.  By the way, this is a perfect recipe for your kids to practice their culinary skills.

Serve with your favorite marinara sauce.  I used pizza sauce for this one—it was a hit!

zucchini3

Here’s the skinny on these yummy treats:

Ingredients

  • 1 large zucchini
  • 1/2 cup shredded parmesan cheese
  • 1 1/2 cups Panko (Japanese style bread crumbs) … bake up crispier than regular bread crumbs
  • 1 1/2 tsp your favorite spicy seasoning (I used Northwoods Fire from Penzeys)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp paprika
  • 3 eggs

Directions

  1. Preheat oven to 425 degrees
  2. Slice zucchini
  3. Combine parmesan cheese, panko, and spices in medium sized bowl
  4. Mix egg whites in small bowl
  5. Dip zucchini in egg white
  6. Coat each piece with cheese mixture
  7. Bake for 35-40 minutes or until crispy
  8. Serve with your favorite marinara

I’ve used a lot of versions of this recipe, but my favorite so far is from my friend Toni! at The Happy Housewife. This recipe inspired by and adapted from her.  Check out Happy’s version here.

Enjoy!

Intentional Intimacy

nurture_intimacy

Good morning, busy moms! It’s HOME FIRES FRIDAY here at the Busy Mom! Woot!

I heard a funny thing yesterday from a mom who read a part (clearly she didn’t read the whole thing) of my book “The Busy Homeschool Mom’s Guide to Romance.” Somehow, she thought I was saying that loving your man physically was just “one more thing for wives to feel responsible for and feel guilty about.” Just one more “thing to do.”

Jay&HeidiFlowers

Hmmm.

While that is definitely NOT the message of my book, it raises an interesting point. Marriage is not all fun-and-games, is it?  Let’s be honest. It’s work.  After a long, demanding day, even my husband’s desire for intimacy can feel like just one more thing I need to do.  I’d love to tell you that I always have a good attitude towards him in this area.  I don’t.  I think most busy moms can relate to the scenarios I wrote about in the book.  You certainly don’t have to be a homeschool mom to be a tired mom!

It’s easy for the demands of life to come between a husband and wife, isn’t it? My husband and I have had our moments, believe me.  With all the pressures we face, the first thing that can go when we’re tired and stressed is sex.

Here’s the thing though: a healthy marriage is key to a healthy, happy family. And nurturing intimacy in your marriage should be at the top of our priority list. Not because it’s a “duty” (although, the Bible tells husbands and wives that our bodies belong to one another) but because it’s good for us!  Our Creator knows what’s good for His creation!

It turns out that a healthy sex life is good for a lot of reasons, busy moms! Continue reading →

Crock Pot Chicken Curry Made Simple

In our house, we love music.  My husband was a professional musician for the first seventeen years of our marriage.  We still spend a lot of time listening to and playing music.  What does that have to do with curry?  Well, we match our meal to our music, that’s what!  So guess what we listen to when we’re eating curry?

Indian music!

If you’re looking for something to eat with your Indian music, give this yummy slow cooker recipe a try.  I’m totally in love with my crock pot, by the way.  Crock pots are a busy moms best friend.  Mine is an 8 quart cooker and is great for our large family. If you haven’t tried curry in your crock pot, give this a try.  By 3pm, your house will smell amazing and you’ll be inspired, no doubt, to turn up the music.

Enjoy!

Put carrots and frozen chicken into the bottom of the crock pot.

In your food processor, add onion, garlic, bell peppers and jalapeño.  Start with the veggies—until you get a mixture that looks like this:

Now, go ahead and add all that other stuff.

Blend together

Blend it all together—it will look like a thick soup. That’s okay.  You’re going to love it.

curryPour

Serve over quinoa or basmati rice.  {yum.}

Here’s the short version:

Ingredients

  • 4-6 boneless chicken breast, cut into bit-sized pieces
  • 5-8 large carrots (more carrots = less chicken = $ savings)
  • 1 whole onion
  • 4 cloves of garlic
  • 2 bell peppers, seeded and quartered (less if you’re not a bell pepper person)
  • 1 small can of tomato paste
  • 1-2 cans of coconut milk
  • 2 tsp sea salt
  • 3 T sugar
  • 2 tablespoons curry powder
  • 1 T red curry paste
  • 1 jalapeño

Make it simple

  1. Place chicken breasts (could be frozen) and carrots in bottom of lightly greased pot
  2. Blend vegetables in food processor
  3. Add remaining ingredients to food processor and blend well
  4. Pour mixture over chicken and carrots
  5. Cook on low for 6 hours
  6. Serve over quinoa or basmati rice, cooked in chicken broth

Serves 8

Happy Curry-ing!  Let me know how it turns out.

For Those Who Believe

Good morning, busy mom!

Do you need some perspective today? The Bible tells us that it is the Lord’s great desire to give us His perspective; His eyes to see.

Check out Ephesians 1:18-19 –

18 I pray that, with the eyes of your heart enlightened, you may comprehend the hope to which he has called you, what are the rich benefits of his glorious inheritance among the saints, 19 and what is the incomparable greatness of his power available for us who believe, according to the

exercise of his mighty strength…”

Do you see that last part? His strength. His. Not mine. Goodness knows Continue reading →
