  1. What is your source of music for these occasions? We use Pandora for themed music with our meals and crafts. Recently when having Shrimp Kabobs, coconut rice and tropical fruit salad, we played a Don Ho station. My 8 yr old loves the Irish station I created when doing St. Patrick’s Day crafts, and he has requested it since then. Just today we played the a Disney station for our “indoor picnic” in the hot weather. Thanks for the continual inspiration, Heidi. Bon appetite!

  2. It looks like you left out the chicken and coconut milk from the typed out version… I’m guessing it’s about 2 cans of coconut milk and about 4 chicken breasts?

  3. This looks delicious. I have 2 toddlers and they can’t handle anything spicy. Is red curry paste spicy? Also, I have never cooked with a jalapeño as I have heard they are spicy… is that true, would you omit that if you were trying to keep it from being spicy 🙂

    1. Hello 🙂 The spiciest part of the jalepeno is the seeds and white membrane that surrounds them. It will still be a little spicy but not as bad. If you have super sensitive little ones, you can omit it. You can also leave out the curry paste. Delicious flavor, it can be added in tiny amounts to individual servings, too. 🙂 Let me know how it turns out and welcome!

      1. I also don’t like but a very slight heat, but I’m confused. If I leave out the curry paste, will it taste at all like curry is supposed to? (I was already planning to skip the jalapeno and the pepper flakes, but didn’t think I could leave out the paste…)

        1. Hi Loralee! I think you could leave it out, but it shouldn’t be spicy. I live the flavor of the curry paste. 🙂 Check the heat level on the jar. Let me know how it turns out! xoxo heidi

  4. Have it simmering right now in the crock pot! Smells amazing!! Made some Jasmine Coconut rice to go with it, YUM! Did omit the Jalapeno, didn’t have one on hand. Heidi, have you ever tried adding pinapple?

Dinner update, family loved it, I may have overdone it with the red pepper flakes nine year old said it was too spicy;) the rest of us loved the kick so this will definitely be added to the recipe box! Thank you for sharing Heidi, this momma of 5 needed a crockpot jump start for the school year, now I’m motivated to find a whole weeks worth! Dreaming of less dinner panic and more menu planning.

    1. Awesome! If it makes you feel any better, my “helper” dumped most of the bottle of red pepper flakes into ours this time. I was able to fish most of it out but not enough, haha! Thanks for letting me know how it turned out 🙂

  7. I keep trying to think of a way to make a vegetarian version of this. I think I will substitute cubed potatoes and a can of chickpeas for the chicken. I’ll let you know how it turns out! This recipe does look sooo good.

  8. Frances I don’t think it’s hot if you use regular curry and not hot curry. Keep the jalapeno out if you are worried about them. I made this today and didn’t have the jalapeno (cry!) so I left it out.

  9. I didn’t have jalapeno either…. and it tasted fine w/out it (when I dipped my spoon in 🙂 not too spicy, not too mild… I added in a bit of crushed red pepper instead, not too much. I also threw in some frozen peas… as I’ve had peas in curry dishes before at restaurants… yum yum..

  10. I made this a couple weeks ago and it was super yummy! Our new favorite curry recipe! I omitted the jalepeno and added some extra veggies. I made a different crockpot curry (more indian flavored) tonight and my husband and I agreed we liked your recipe better. Even my picky kids loved your recipe!

  11. Oh, I´m so happy that I found that recipe, since my husband wants to try a curry in our brandnew crock pot.
    Not too many people in Germany know what that is and even though I find nice recipes in german, there are tons from the USA. This one sounds delicious! ♥
    We have a 4 quarter slow cooker and we are 4 persons.
    Can you please tell me for how many persons this recipe is since you used an 8 quarter?
    I would be very happy to hear from you and I´m sorry for any mistakes, my English is not perfect, but I try! 😉

    1. Hi Alice! I use this in my six quart and it works just fine. I bet yours would do fine. If you’re worried, try cutting the recipe down just a bit. Let me know how you like it! By the way I was in Germany last year. I loved it. Beautiful country. 🙂

  15. Can I substitute chicken broth for the coconut milk? I don’t have time to go to the store and I am not a fan of coconut flavor anyway.

  16. Lena Ver – you could use Almond Milk in place of Coconut – or Soy, I suppose, tho the Coconut Milk is incredibly good for you! (Read ‘The Coconut Miracle’!!) Deb, coconut milk does not add a coconut flavor. It just makes it smooth, and really delicious! … And Melissa, to be vegetarian, try using baked Squash – Butternut or Sweet Meat. Have made it with no chicken – and we love it! Add a dollop of your favorite chutney on top of each serving… 😉 THANK YOU, Heidi, for this inspiration!
