In our house, we love music. My husband was a professional musician for the first seventeen years of our marriage. We still spend a lot of time listening to and playing music. What does that have to do with curry? Well, we match our meal to our music, that’s what! So guess what we listen to when we’re eating curry?
Indian music!
If you’re looking for something to eat with your Indian music, give this yummy slow cooker recipe a try. I’m totally in love with my crock pot, by the way. Crock pots are a busy moms best friend. Mine is an 8 quart cooker and is great for our large family. If you haven’t tried curry in your crock pot, give this a try. By 3pm, your house will smell amazing and you’ll be inspired, no doubt, to turn up the music.
Enjoy!
Put carrots and frozen chicken into the bottom of the crock pot.
In your food processor, add onion, garlic, bell peppers and jalapeño. Start with the veggies—until you get a mixture that looks like this:
Now, go ahead and add all that other stuff.
Blend it all together—it will look like a thick soup. That’s okay. You’re going to love it.
Serve over quinoa or basmati rice. {yum.}
Here’s the short version:
Ingredients
- 4-6 boneless chicken breast, cut into bit-sized pieces
- 5-8 large carrots (more carrots = less chicken = $ savings)
- 1 whole onion
- 4 cloves of garlic
- 2 bell peppers, seeded and quartered (less if you’re not a bell pepper person)
- 1 small can of tomato paste
- 1-2 cans of coconut milk
- 2 tsp sea salt
- 3 T sugar
- 2 tablespoons curry powder
- 1 T red curry paste
- 1 jalapeño
Make it simple
- Place chicken breasts (could be frozen) and carrots in bottom of lightly greased pot
- Blend vegetables in food processor
- Add remaining ingredients to food processor and blend well
- Pour mixture over chicken and carrots
- Cook on low for 6 hours
- Serve over quinoa or basmati rice, cooked in chicken broth

What is your source of music for these occasions? We use Pandora for themed music with our meals and crafts. Recently when having Shrimp Kabobs, coconut rice and tropical fruit salad, we played a Don Ho station. My 8 yr old loves the Irish station I created when doing St. Patrick’s Day crafts, and he has requested it since then. It looks like you left out the chicken and coconut milk from the typed out version… I’m guessing it’s about 2 cans of coconut milk and about 4 chicken breasts?

This looks delicious. I have 2 toddlers and they can’t handle anything spicy. Is red curry paste spicy? Also, I have never cooked with a jalapeño as I have heard they are spicy… is that true, would you omit that if you were trying to keep it from being spicy 🙂

Hello 🙂 The spiciest part of the jalepeno is the seeds and white membrane that surrounds them. It will still be a little spicy but not as bad. If you have super sensitive little ones, you can omit it. You can also leave out the curry paste. Delicious flavor, it can be added in tiny amounts to individual servings, too. 🙂 Let me know how it turns out and welcome!
I also don’t like but a very slight heat, but I’m confused. If I leave out the curry paste, will it taste at all like curry is supposed to? (I was already planning to skip the jalapeno and the pepper flakes, but didn’t think I could leave out the paste…)

Dinner update, family loved it, I may have overdone it with the red pepper flakes nine year old said it was too spicy;) the rest of us loved the kick so this will definitely be added to the recipe box! Thank you for sharing Heidi, this momma of 5 needed a crockpot jump start for the school year, now I’m motivated to find a whole weeks worth! Dreaming of less dinner panic and more menu planning.

I keep trying to think of a way to make a vegetarian version of this. I think I will substitute cubed potatoes and a can of chickpeas for the chicken. I’ll let you know how it turns out! This recipe does look sooo good.

Frances I don’t think it’s hot if you use regular curry and not hot curry. Keep the jalapeno out if you are worried about them. I made this today and didn’t have the jalapeno (cry!) so I left it out.

I didn’t have jalapeno either…. and it tasted fine w/out it (when I dipped my spoon in 🙂 not too spicy, not too mild… I added in a bit of crushed red pepper instead, not too much. I also threw in some frozen peas… as I’ve had peas in curry dishes before at restaurants… yum yum..

@ Shelby~ Curry refers to the blend of spices, not to heat. All though, curries do come in varied heats from mild to insanely hot.

I made this a couple weeks ago and it was super yummy! Our new favorite curry recipe! I omitted the jalepeno and added some extra veggies. I made a different crockpot curry (more indian flavored) tonight and my husband and I agreed we liked your recipe better. Even my picky kids loved your recipe!

Hi Alice! I use this in my six quart and it works just fine. I bet yours would do fine. If you’re worried, try cutting the recipe down just a bit. Let me know how you like it! By the way I was in Germany last year. I loved it. Beautiful country. 🙂

Lena Ver – you could use Almond Milk in place of Coconut – or Soy, I suppose, tho the Coconut Milk is incredibly good for you! (Read ‘The Coconut Miracle’!!) Deb, coconut milk does not add a coconut flavor. It just makes it smooth, and really delicious! … And Melissa, to be vegetarian, try using baked Squash – Butternut or Sweet Meat.
